Honey & Herb Vinaigrette

” let this dressing stand for at least 30 minutes to get all the flavors out”
100ml Virgin olive oil (try and find a good one)
50ml fresh lemon juice
2 tbsp Honey
1/2 tsp Dijon mustard
1/2 tsp Finely chopped fresh garlic
1/2 tsp Finely chopped fresh Thives or Tarragon
1/2 tsp Finely chopped Italian parsley
Pinch of Sea salt
Pinch of Freshly ground black pepper
In shake jar or small glass bowl, whisk together oil, lemon juice, honey and mustard. Add garlic, chives or tarragon, parsley, salt and pepper.
Let stand 20 minutes before using.
