Parma-Wrapped Chicken with Mediterranean Vegetables
This is such a simple dish to make and can look great on a plate – this dish is inspired by my ex-wife…as she is of Portuguese decent this dish can be changed slightly by adding about 1 tsp of good Peri Peri oil- this gives it a sutler bite if u like the hot-stuff then add more to your personal tastes.
There is another recipe that is dedicated to her which i used to make and i post it soon keep and eye for Portuguese Peri Peri livers with a Coriander & Mint yogurt

Baked Chicken Liver Pate
This Liver pate recipe is very rich. It is time consuming and needs a little effort but the end result is out of this world. Baked chicken liver pate is great as a starter served on brochette or a Crostini- keep in your fridge for those mid afternoon snacks. You can also put it in plastic wrap and put it in the freezer- when you are cooking a fillet of beef u can take it out cut a slice and lay it on top ( like butter) before you serve it-
